5-minute healthy cucumber salad is the Indonesian-inspired side that delivers heat, sweetness, and zest to your table in minutes.

Ingredients

  • 1 cucumber, cut in half lengthwise, and sliced into half-moons. (Remove the seeds if desired, but don't peel)
  • 1 red chili, thinly sliced
  • 3 -4 scallions (green onions), thinly slice the white parts
  • ΒΌ cup lime juice
  • 1-2 tsp. sambal oelek (or another chili paste)
  • 2 tsp. agave syrup or another liquid sweetener

Instructions

  1. In a smaller salad bowl, combine the cucumber, red chili, and scallions.
  2. In a small bowl or jar, combine the chili paste, lime juice, and agave syrup.
  3. Add the dressing to the cucumber and mix well.
  4. Serve immediately or cover it and keep it in the refrigerator until you are ready to serve. Be sure to mix it right before serving.

Notes

  • Sambal Oelek is a chili paste made with red chilis, salt, and usually vinegar. Look for this in bigger supermarkets or Asian markets. You can substitute another chili paste such as sriracha. This will have more of a garlic flavor than the sambal.
  • This salad can be made ahead of time, then covered and kept in the refrigerator. This will allow the flavors to combine.
