1cucumber, cut in half lengthwise, and sliced into half-moons. (Remove the seeds if desired, but don't peel)
1red chili, thinly sliced
3 -4scallions (green onions), thinly slice the white parts
ΒΌ cuplime juice
1-2 tsp. sambal oelek (or another chili paste)
2 tsp. agave syrup or another liquid sweetener
Instructions
In a smaller salad bowl, combine the cucumber, red chili, and scallions.
In a small bowl or jar, combine the chili paste, lime juice, and agave syrup.
Add the dressing to the cucumber and mix well.
Serve immediately or cover it and keep it in the refrigerator until you are ready to serve. Be sure to mix it right before serving.
Notes
Sambal Oelek is a chili paste made with red chilis, salt, and usually vinegar. Look for this in bigger supermarkets or Asian markets. You can substitute another chili paste such as sriracha. This will have more of a garlic flavor than the sambal.
This salad can be made ahead of time, then covered and kept in the refrigerator. This will allow the flavors to combine.
